hey i just did somethin really fun i dunno if anyone else has tried this before but neh ill say anyway just so whoever else has got this can try it out:
from the old air strip i unlocked in the missions, i took the old spitfire type plane n flew it over the area 69 base which got me immediate 5 stars wanted level ( at this bit you have to dodge the missiles they fire at u, which is a pain in teh ass when ur not goin fast enough etc etc )And then waited till the 2 harrier jets catch up and then you can turn on em n shoot it out 
real fun for me lol i dun all the missions so findin new stuff to do is always fun, its sometimes difficult to dodge their rockets cos ur plane is alot slower than the jet but its cool doin the old circlin game n gettin on the inside of em n shootin em down like u see in the old war movies 
I got both my wings shot out one time so tryin to control the plane was a bitch n i flew into a police helicopter n blew up 
its a good laff tho i suggest ya have a go
